Here's the recipe: 1 bottle Pink Punch 1 bottle sparkling wine (we like a dry one, Proseco, for example) glass of your choice (optional) fruit to garnish TIP: pour the bubbly first! Did you know 98% of the juice in the U.S. has been pasteurized? Have you ever wondered why we don’t pasteurize our juice? Because raw, fresh juice is the healthiest way to deliver vitality directly to our bodies! We all know that fruits and vegetables are good for us (and most of us could probably eat more of them). But, eating these fruits and veggies raw ensures that we receive the maximum amount of nutrition that they have to offer. We loved it so much that we are bringing a recipe, featuring White Birch juices or local ingredients, to you each Monday! This week: An easy, delicious summer salad dressing featuring our strawberry, pineapple, apple, orange juice-- Pink Punch! Recipe: 1 tablespoon Pink Punch juice 1/2 teaspoon Apple Cider Vinegar (we like ACV for its yummy taste and its health benefits, but you can replace with balsamic, or anything you like!) 1/2 teaspoon oil (we like coconut or olive! This is optional, and omitting oil makes this recipe low fat and low calorie! We added a bit of fresh mint from our herb garden and some salt & pepper to taste! Drizzle over your favorite lettuce and salad fixings (maybe even add some sliced strawberries--yum!), and enjoy!

The other night, this collaboration of goodness was made at our house. Chicken (Roffey Cattle Company, Elk Garden, VA), The Baker Homestead Goat Cheese (Abingdon, VA), Spinach, garlic, onions, shiitake mushrooms & herbs (Nicole & Kyle's garden and logs) & hand-squeezed almond milk & orange juice (White Birch Juice). Try it for yourself! Recipe (approximations): 1) Pan sear the chicken (sectioned into pieces) in olive oil, garlic, onion salt, pepper & balsamic reduction until cooked thoroughly. 2) Meanwhile, sauté spinach, herbs (of your choice) and mushrooms in olive oil 3) for sauce: stirring constantly, add olive oil, almond milk, orange juice, Braggs liquid aminos, ginger, garlic, orange zest, goat cheese. YUM. Biscuit (the pup) just wants a little bite!
