Bring your MIMOSA to the next level this summer, with White Birch Juice! Add our Pink Punch to your favorite champagne for the perfectly bubbly, sweet summer cocktail. It's a simple twist on your traditional mimosa, that'll be sure to impress you and your friends!

Here's the recipe:

1 bottle Pink Punch

1 bottle sparkling wine (we like a dry one,  Proseco, for example)

glass of your choice

(optional) fruit to garnish



TIP: pour the bubbly first! Fill glass 1/2 way with bubbles, then 1/2 with juice. Makes approx 3-5 drinks.

MEALTIME MONDAY: Banana Almond Ice Cream

I scream; you scream; we all scream for ice cream! Indulge in this simple & DELICIOUS ice cream recipe. It just has two, pure, healthy  ingredients!

Ingredients (per 1 generous serving):

2 frozen bananas

¼ cup almond milk (we like our hand-pressed almond milk, which has a touch of vanilla and agave)

Any mix-in’s! This is the perfect time to unleash your creativity.   We added some chopped dark chocolate and fresh mint on top.



OR replace the almond milk with one of our creamy juice flavors--We think Orange Dream, Pineapple Paradise, or Coffee Almond Zazz would be AMAZING. 

Just add the bananas and almond milk into your high-powered blender or food processor. Pulse until smooth. 


Use a spatula to scrape the sides a few times throughout the process.

Did you know 98% of the juice in the U.S. has been pasteurized? Have you ever wondered why we don’t pasteurize our juice? Because raw, fresh juice is the healthiest way to deliver vitality directly to our bodies!

We all know that fruits and vegetables are good for us (and most of us could probably eat more of them). But, eating these fruits and veggies raw ensures that we receive the maximum amount of nutrition that they have to offer. They are full of vitamins and minerals that humans can’t get from any other source—these micronutrients are the reason that we feel revitalized after sipping a bottle of yummy juice!

If we are getting our necessary nutrients from juice…shouldn’t it be fresh and made with love? At White Birch Juice, we choose not to pasteurize, because with its high amounts of heat, pasteurization kills off those micronutrients that make us feel so good post-green-juice. 

Heating above 118 degrees breaks down vitamins, minerals, live enzymes, and amino acids, all of which being crucial players in increasing the body’s ability to maintain and repair organ systems and tissue. This heating also causes chemical changes in certain foods that can create acidic toxins, including mutations, carcinogens & free radicals associated with diseases like diabetes, heart disease, arthritis and cancer.

 We also use a cold-pressed juicer (the first and only one in the region!!!!). This juicer uses TONS of pressure to squeeze out every last drop of juice from whole fruits and veggies, without ANY heat.

MEALTIME MONDAYS: Summer salad dressing

 Did you love last week's  local market meal?    We loved it so much that we are bringing a  recipe, featuring White Birch juices or local ingredients, to you each Monday! 

This week: An easy, delicious summer salad dressing  featuring our strawberry, pineapple, apple, orange juice-- Pink Punch! 

Recipe:

1 tablespoon Pink Punch juice

1/2 teaspoon  Apple Cider Vinegar (we like ACV for its yummy taste and its  health benefits, but you can replace with balsamic, or anything you like!)

1/2 teaspoon oil (we like coconut or olive! This is optional, and omitting oil makes this recipe low fat and low calorie!


We added a bit of fresh mint from  our herb garden  and some salt & pepper to taste!

Drizzle over your favorite lettuce and salad fixings (maybe even add some sliced strawberries--yum!), and enjoy!

Market meal, cooking locally with White Birch Juice

Living in one of the richest agricultural pockets in the country, SWVA sure has lots to offer when it comes to  blending up a locally sourced dinner. With local farmers, growers & food producers in the region, it helps when you're craving something just scrumptious. Tuesday pm & Saturday am Abingdon farmers markets are just the place to find all of these ingredients! And, while you're at it, why not  whisk some WBJ into that "secret sauce"?

The other night, this collaboration of goodness was made at our house.  Chicken (Roffey Cattle Company, Elk Garden, VA), The Baker Homestead  Goat Cheese (Abingdon, VA),  Spinach, garlic, onions, shiitake mushrooms & herbs  (Nicole & Kyle's garden and logs)  & hand-squeezed almond milk & orange juice (White Birch Juice).

Try it for yourself!
Recipe (approximations):

1) Pan sear the chicken (sectioned into pieces) in olive oil, garlic, onion salt, pepper & balsamic reduction until cooked thoroughly.

2) Meanwhile, sauté spinach, herbs (of your choice) and mushrooms in olive oil

3) for sauce: stirring constantly, add olive oil, almond milk, orange juice, Braggs liquid aminos, ginger, garlic, orange zest, goat cheese.

Apple Cider Vinegar (ACV) is a super healthy, super versatile ingredient to keep in your home.
  

It has many uses:

  • Conditioning hair rinse (don't worry, your hair won't smell like vinegar all day!)
  • Sore throat sooth-er
  • Sunburn healer (Add a  cup or two of ACV to a warm bath, and soak for 10 minutes or more!)
  • Homemade cleaning products


It also has endless heath benefits, including:

  • It balances pH  due to its high concentration of acetic acid (which supports healthy enzymes and bacteria!)
  • It is a powerful antimicrobial and can  give your immune system a boost
  • ACV majorly regulates blood sugar  and could help to reduce the effects of insulin sensitivity
